Cranberry Celebration
Cranberries are a delicious way to maintain good urinary tract and kidney health. There are many ways to enjoy this plentiful fruit. Having diabetes warrants closer attention of the urinary tract and kidneys. The following recipes are all diabetes friendly and include exchange and dietary values. For a delicious holiday treat, add 1/2 cup of fresh cranberries to your stuffing before cooking.Spiced Cranberry Dip ¤ May 23, 2008
1 - 8oz light cream cheese, softened
1/2 cup whole cranberry sauce
1/4 cup orange marmalade
1/8 teaspoon cayenne pepper
1/4 cup toasted almonds
1.)Spread cream cheese in bottom of pie plate. Mix
cranberry sauce, marmalade & cayenne and spoon over
cream cheese.
2.)Top with almonds & serve with ritz crackers.
Makes 14 servings

Chocolate Cranberry Oat Bars ¤ May 23, 2008
1 cup dried cranberries
1/4 cup orange juice
1 1/2 cups flour
1 1/2 cups quick cooking oats, uncooked
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup [1 1/2 sticks] light butter, softened
1 1/2 cups firmly packed brown sugar
2 eggs
4 squares semi sweet baking chocolate, chopped
1/2 cup pecan pieces
1.)preheat oven to 350*F. Combine cranberries &
orange juice & microwave on high for 30 seconds.
Let stand for 10 minutes.
2.)Meanwhile, combine flour, oats, baking powder
& salt; set aside. Beat butter & sugar with electric
mixer on medium until light 7 fluffy. Add eggs and
beat until well blended. Stir in cranberry mix,
chocolate & pecans.
3.)Spread into 13x9 baking pan sprayed with cooking
spray. Bake for 20 minutes & cool completely before
serving.
Makes 32 servings

2 - 3oz raspberry sugar-free jello mixes
1 - 8oz canned cranberry sauce
1 apple, peeled & chopped
2 stalks celery, finely chopped
2oz unsalted cashews, finely chopped
1/4 cup light sour cream
1.)Mix jello according to package. When cool, add
remaining ingredients. Refrigerate until firm.
Makes 8 servings

Pumpkin-Cranberry Bread ¤ May 23, 2008
3 cups all-purpose flour
1 tablespoon pumpkin pie spice
2 teaspoons baking soda
1 1/2 teaspoons salt
3 cups sugar
1 can pumpkin
4 large eggs
1 cup vegetable oil
1/2 cup apple juice
1 cup dried or fresh cranberries
1.)Preheat oven to 350*F. Grease & flour 5 or 6
5x3 mini loaf pans.
2.)Mix flour, spice, baking soda & salt in large bowl.
Mix sugar, pumpkin, eggs, oil & juice in seperate
large bowl. Add mixtures together & stir until moist.
Fold in cranberries & spoon into loaf pans.
3.)Bake for 50 to 55 minutes. Cool in pans for 10 minutes
& remove to cool completely.
Makes 20 servings
