Tater Tot Casserole ¤ May 23, 2008
1 bag Ore Ida tater tots
1 can cream of mushroom soup
3/4 c. skim milk
2 c. shredded cheddar cheese
1 lb. ground chuck, browned & drained

Preheat oven to 350*.
Place tater tots and ground chuck in bottom of glass baking dish. Pour soup and milk on top. Cover mixture with shredded cheese.
Bake for 45 minutes to 1 hour.

Giant Twice-Baked Potato ¤ May 23, 2008
6 large potatoes, baked, skinned & mashed
1 can real bacon pieces
2 c. shredded colby cheese
1 - 8 oz. sour cream
1 bunch green onions, chopped
1 small onion, chopped
salt and pepper, to taste

Preheat oven to 325*.
Mix all ingredients in greased glass baking dish bake for 30 minutes.

Campfire Casserole ¤ May 23, 2008
1 lb ground chuck
1 small chopped onion
1 small chopped red bell pepper
1 can rinsed navy beans
1 can rinsed red kidney beans
1 cup black bean and corn salsa
1 cup shredded colby cheese

Heat oven to 375*
In a large skillet, cook ground chuck, onion and pepper until done. Drain.
Stir in beans and salsa.
Bring to a boil; reduce heat, cover and simmer 10 minutes or until thickened.
Spoon half the mixture into a 2-quart baking dish coated with cooking spray.
Sprinkle with half the cheese. Pour remaining bean mixture over cheese.
Top with remaining cheese. Bake, uncovered, 30 minutes or until bubbly.

Hashbrown Casserole ¤ May 23, 2008
2 lbs Ore Ida frozen shredded potatoes
1 can cream of chicken soup
1 1/3 c. shredded cheddar cheese
1/3 c. + 1 1/2 tbsp. melted butter
salt & pepper, to taste
1/4 tsp. onion powder
1/4 tsp. garlic powder

Mix all ingredients together by hand until well blended.
Place in a greased casserole dish and pile loosely.
Cover with foil and bake for 30 minutes at 350*.

The Byrdgirl's Chicken Tetrazinni ¤ May 23, 2008
1 Chicken-Boiled, Skinned, Deboned, Shredded
2 Sweet Peppers, Cut Into Strips ( I Use 1 Red & 1 Green For Color)
1 Can Original Rotel
1 Can Cream of Chicken or Mushroom Soup
2 Cups Shredded Cheddar
1 Small White Onion, Diced (Only If You Like Onions!)
1 Medium Package Spaghetti Noodles, Boiled & Drained
1 Stick Margarine

Preheat Oven to 350*F.
In large saucepan, heat all ingredients except noodles, until cheese and margarine are thoroughly melted.
Put noodles in a lightly greased or buttered 13 x 9 casserole dish.
Pour sauce mixture over noodles. Use a fork to distribute and make sure the noodles are well covered.
Cover with foil. Bake for 30 minutes.

This is a HUGE favorite of my boyfriends, my family, and my friends.
I got it from my grandmother and tweaked it to my liking.

Chicken Casserole ¤ May 23, 2008
8 cups shredded cooked chicken
2 cans cream of chicken soup
1 cup light sour scream
1 cup ritz cracker crumbs (about 25 crackers)
2 tablespoons light butter melted
salt, to taste
pepper, to taste
seasoning, to taste

Combine chick, soup, and sour cream; spread into a greased 9x13 pan. Combine crumbs, butter, and celery seed; sprinkle over chicken mixture.

Bake, uncovered, at 350 for 30-35 minutes or until bubbly.
