Layered Pumpkin Loaf ¤ May 23, 2008
1 cup canned pumpkin
1 cup granulated sugar
2 tablespoons granulated sugar
1/2 cup firmly packed brown sugar
4 egg whites, divided
1/2 cup skim milk
1/2 cup canola oil
2 cups flour
2 1/2 teaspoons baking powder
2 teaspoons pumpkin pie spice
1/4 teaspoon salt
1 - 8oz light cream cheese, softened

1.)Preheat oven to 350*F. Grease 9x5 loaf pan; set aside.
Mix pumpkin, 1 cup sugar, brown sugar, 3 egg whites,
milk & oil in large bowl. Add flour, baking powder, spice
& salt; stir until just moistened. Set aside. Beat cream cheese,
2 tablespoons of sugar & last egg white with wire whisk until
well blended.
2.)Spoon half of the pumpkin batter into greased pan.
Spoon cheese mix evenly over batter. Cover with remaining
pumpkin batter.
3.)Bake 1 hour or until toothpick comes out clean.
Run knife around edges to loosen bread. Cool in pan
on wire rack for at least 10 minutes.

Makes 1 loaf, 16 1 slice servings

Pumpkin-Cranberry Bread ¤ May 23, 2008
3 cups all-purpose flour
1 tablespoon pumpkin pie spice
2 teaspoons baking soda
1 1/2 teaspoons salt
3 cups sugar
1 can pumpkin
4 large eggs
1 cup vegetable oil
1/2 cup apple juice
1 cup dried or fresh cranberries

1.)Preheat oven to 350*F. Grease & flour 5 or 6
5x3 mini loaf pans.
2.)Mix flour, spice, baking soda & salt in large bowl.
Mix sugar, pumpkin, eggs, oil & juice in seperate
large bowl. Add mixtures together & stir until moist.
Fold in cranberries & spoon into loaf pans.
3.)Bake for 50 to 55 minutes. Cool in pans for 10 minutes
& remove to cool completely.

Makes 20 servings
