Peanut Butter Striped Delight ¤ May 23, 2008
35 Oreo cookies
6 tablespoons fat-free butter, melted
1 - 8oz light cream cheese, softened
1/4 cup sugar
3 cups cold skim milk
2 tablespoons cold skim milk
1 contained light cool whip, thawed
2 4 serving packages sugar-free instant vanilla pudding
1/3 cup light peanut butter

1.)Place cookies in food processor. Process until finely
crumbled. Pour in medium bowl. Add butter; mix well.
Press firmly in bottom of 13x9 pan. Refrigerate.
Meanwhile, beat cream cheese, sugar & 2 tablespoons milk
with wire whisk until well blended. Add 1 1/4 cups cool whip.
Spread mixture over refrigerated crust.
2.)Pour 3 cups milk into large bowl. Add pudding mixes.
Beat with wire whisk until well blended. Add peanut butter;
mix well. Spread evenly over cream cheese layer. Let stand
5 minutes or until thickened. Top with remaining cool whip.
3.)Cover & refrigerate at least 4 hours before cutting.

Chocolate Pudding Pie ¤ May 23, 2008
1 1/2 cups cold skim milk
1 4 serving package sugar-free chocolate instant pudding mix
1 graham cracker or oreo pie crust
1 container light cool whip, thawed

1.)Pour milk into large bowl. Add pudding mix.
Beat with wire whisk until well blended. Spoon
half of mix into pie crust.
2.)Gently stir 1 cup of cool whip into remaining pudding.
spoon over pudding layer in crust.
3.)Top with remaining cool whip. Refrigerate at least 3
hours before serving.

Sweet Maple Acorn Squash ¤ May 23, 2008
1 - 1.5 lb. Acorn Squash, cut lengthwise in half & seeded
2 Slices Maple Cured Bacon
2 Tablespoons Maple Syrup
1 Tablespoon Balsamic Vinaigrette Dressing

Place squash, cut sides up, in microwavable dish,
cover with plastic, and cut a slit to vent.
Microwave on high 12 to 14 minutes, until squash is tender.
Meanwhile cook bacon & drain. Mix syrup & dressing.
Brush onto squash. Crumble bacon & sprinkle over top.

Makes 6 1/2 cup servings

Festive Tea Punch ¤ May 23, 2008
6 c. water
3/4 c. sugar
1/3 c. nestea unsweetened instant tea
8 whole cloves
2 cinnamon sticks
2 1/2 c. fruit punch
1/4 c. lemon juice

1.)Combine water, sugar, nestea, cloves & cinnamon in saucepan.
Bring to a boil over high heat, stirring occasionally.
2.)Stir in punch & lemon juice. Serve hot.

Giblet Gravy ¤ May 23, 2008
1/2 cup diced, cooked turkey giblets
1/4 teaspoon ground sage
1/4 teaspoon black pepper
1 - 10.5 oz can turkey gravy

Place all ingredients in saucepan.
Cook, stirring occasionally, over medium-
low heat for about 5 minutes.
Thin with water if necessary.
